Restaurants do this in order to:
A. Make sure that you come. If not, they will charge your credit card to make up for the money they lost by not having your business.
B. Make sure that you call and cancel if you can’t make it.
Imagine making a reservation for a party of 10. They have to bring on extra staff, set up, arrange other tables accordingly. If the party does not show up, the restaurant loses the business, and the servers will not receive the tip.
Think of your time dining at a restaurant as renting a piece of property. Also, any restaurant I’ve ever worked at would never use a person’s credit card # for anything other than the intended use.
